Halloween Pasta Recipe: Frankenstein Fettuccine

This Frankenstein Fettuccine is a healthy Halloween meal idea that's fun and easy to make with a simple fettuccine alfredo sauce and easy decorations. I found the original recipe in the recipe book from my daughter's Grade 5 cooking class; it's that easy! And I've even lightened it up so it's Weight Watchers friendly @ 8 WW points on my plan (*see WW friendly under "Variations") (Frankenccine)

If you're looking for Halloween pasta recipes, you'll love this one! It's popular during Halloween season but would make a great dinner for a horror movie marathon or monster theme party! It's a fun dinner that's ideal for young children and their parents (even picky eaters will love it!)

This recipe was inspired by my Halloween Breakfast Pizza Sandwich on this site. I have been trying to create some festive Halloween recipes that are savory and a little healthier. Halloween isn't just about the candy!

Frankenstein, by Mary Shelley, is one of my all time favorite novels and I grew up with Frankenstein as the ultimate monster and Halloween symbol. So what better than Frankenstein food for Halloween dinner?!

🥘Ingredients

For this Frankenstein pasta, you'll need:

  • fettuccine noodles *I use Catelli spinach and roasted garlic because they are  naturally green and healthier (but you could substitute spinach pasta)
  • whole pitted black olives * I use canned
  • butter *see WW variations below for variation
  • flour
  • salt
  • pepper
  • milk *I use 1% (use non-fat to reduce WW points)
  • parmesan cheese *I use light (use non-fat to reduce WW points)
  • garlic
  • green food coloring (affiliate link)* I use Wilton icing color (leaf green)

🔪Instructions

How to make Frankenstein Fettuccine Alfredo Sauce:

  1. Bring 4-5 litres of cold water to a boil in a large sized pot. Cook as per pasta package directions. *NOTE: I had to boil the Catelli pasta I used for about 20 minutes. Once pasta is cooked, drain and set aside. Add a little butter to prevent pasta from sticking together (do not rinse). Meanwhile, make Alfredo pasta sauce: melt butter over medium heat in the same pot you used to cook the noodles (don't worry if there are a couple of noodles stuck to the bottom)
  2. Add flour, salt and pepper and whisk together. Slowly pour in milk, whisking continuously as you pour, until combined.
  3. Slowly pour in milk, whisking continuously as you pour, until combined. Add parmesan cheese and garlic, continue to whisk until cheese melts into the mixture and becomes smooth. Continue to cook over medium heat, whisking until sauce becomes thick. *You want it to be the consistency of gravy.
  4. Whisk in drops of green food coloring (a little at a time, until desired color is achieved).
  5. Continue to whisk until color is evenly distributed. Once sauce thickens, remove from heat. Pour cooked pasta into pot and mix well. *Sauce will thicken as it cools

Assembly:

The best way to get the shape for this Frankenstein pasta recipe, is to use a 8X8 cake pan:

  1. Spray an 8X8 square cake pan with non-stick cooking spray and pack pasta into it with a spoon, compressing as much as you can.
  2. Put a large square plate or platter (white, if possible) on top of pan.
  3. Flip pan over so it's on top of the plate.
  4. Gently remove pan.
  5. For eyes: use a round cookie cutter (or something similar) and pour parmesan cheese for whites of eyes. Add a whole black olive for each eye.
  6. Slice black olives in half for hair and place at the top, as shown. Place 1 half for nose. For mouth, scar and eyebrows, slice each olive in 4 and place as shown. Add 2 whole olives to the sides, as shown.

Hint: l like to use a 2 inch round cookie cutter (affiliate link) for making the eyes. However, if you don't have this or have time to get one, you could make an indent with something round approximately the same size (such as a medicine cup that comes with cough syrup)

📖Variations & Substitutions

  • WW Friendlier - use fat-free parmesan, non-fat milk and light butter
  • Pasta - if you don't have fettucine noodles, you could another type of pasta, such as spaghetti noodles
  • Spicy - add chili pepper flakes or sriracha sauce
  • Gluten-free- use a gluten-free to make this gluten free noodle
  • Add-ins: you can add chicken breast, turkey bacon or extra lean ground beef to this fettuccine if you desire
  • Green food coloring: you could use a grocery store green food color, but you won't get the same green

🥗 Side dishes

This recipe goes well with a side dish like a simple garlic bread. Here are few other recommendations:

🍽Equipment

You can use any type of large pot to make the fettuccine and you will need an 8X8 square cake pan (affiliate link) for shaping the fettuccine (it's the perfect size!)

🌡️Storage

Store the fettuccine for up to 3 days in the fridge in an airtight container. You can also freeze leftovers in a sealed container for up to 3 months.

👪 Serving size

This fun Halloween dinner serves 8. However, you can also cut this recipe in half or double or triple it by adjusting the serving size on the recipe card. This Frankenstein Fettuccine is a fun and easy Halloween pasta recipe, using a simple fettuccine sauce, green fettuccine noodles, black olives and parmesan cheese. It's the ideal Frankenstein food and Halloween dinner idea for kids and adults, a horror movie marathon or a monster themed party!

Ingredients

  • 375 g - package of fettuccine noodles * I used Catelli spinach and roasted garlic
  • ½ - can black olives
  • 4 tablespoon butter
  • 3 tablespoon flour
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 cups milk 1% or non fat
  • 1 cup grated parmesan cheese * I use light or non-fat
  • 3 cloves garlic
  • ½ teaspoon green food coloring (leaf green) * I use Wilton Leaf Green icing coloring

Instructions

Once pasta is cooked al dente, drain and set aside. Add a little butter to prevent pasta from sticking together (do not rinse). Meanwhile, make Alfredo sauce: melt butter over medium heat in the same pot you used to cook the noodles (don't worry if there are a couple of noodles stuck to the bottom)
  • Add flour, salt and pepper and whisk together. Slowly pour in milk, whisking continuously as you pour, until combined.
  • Add parmesan cheese and garlic, continue to whisk until cheese melts into the mixture and becomes smooth. Continue to cook over medium heat, whisking until sauce becomes thick. *You want it to be the consistency of gravy
  • Whisk in green food coloring (add color with a toothpick until you get the hue you want).
  • Continue to whisk until color is evenly distributed. Once sauce thickens, remove from heat. Pour pasta into pot and mix well. *Sauce will thicken as it cools

Assembly
