The 5 Minute Ukrainian Breakfast Sandwich

A quick poached egg and kubasa on a english muffin, with Ukrainian flavours, makes this a fast and satisfying breakfast

Instructions

  • Toast English muffin.
  • Spray inside of a coffee mug with non stick cooking spray. Break egg into mug and add in dry cottage cheese and dill. Stir gently for a second and try not to break the yolk.
  • Put egg mixture into microwave for 30 – 40 seconds (with cover) or until egg is set. Gently loosen by running knife between inside of mug and egg.
  • Mix sour cream, horseradish and mustard together. Spread evenly on each side of the English muffin.
  • Top one side of the English muffin with sliced kubasa and gently slide the cooked egg out of the mug and on top kubasa.
  • Add sliced tomato. Top with other half of English muffin.
  • Serve immediately.
