½red onion, chopped
4tomatoes (roma), chopped
2tablespoonfresh cilantro finely chopped
1smallred pepper, chopped* or ½ of a large pepper
1smallyellow pepper, chopped* or ½ of a large pepper
1smallgreen pepper, chopped* or ½ of a large pepper
Mix all ingredients together in bowl.
*NOTE: if you have never chopped fresh jalapenos before, I recommend wearing food safe gloves. Either way, be very careful and don't touch your mouth, nose or eyes (they will burn) during the preparation process (try not to touch the inside of the pepper).
