This Healthy Pina Colada Mocktail recipe is a low calorie, low sugar, easy and healthy frozen summer drink. Although it's a non alcoholic mocktail, it can also be spiked! It's Weight Watchers friendly @ 6 WW points on the blue plan (for a 12 oz drink!)
Add pineapple and juice, light coconut milk, coconut extract, rum extract and ice to the blender and blend until smooth. * If you are spiking it with actual rum, leave the rum extract out and add that separately to the ones you want to keep as mocktails
Toasted Coconut (optional)
Preheat oven to 325 degrees F/175 degrees C .Spread coconut evenly on a rimmed baking sheet.
Bake until lightly golden and fragrant, stirring frequently, about 5 to 10 minutes.
Store leftovers in a ziplock freezer bag in the fridge for up to a week and in the freezer for up to 3 months.
Garnish (optional)
Top with light whipping cream, toasted coconut and maraschino cherry, if desired.
