🥘 Ingredients
Instead of using Pina Colada mix, this healthy Pina Colada mocktail uses canned crushed pineapple, coconut flavors and a little agave to get the fabulous tropical taste, without too much sweetness. It's like a pineapple coconut smoothie. I love these slushy little wonders and I could drink a gallon of them. All you need for this recipe is:
- canned crushed pineapple
- light coconut milk
- coconut extract
- rum extract
- agave
- ice
- a blender
- toasted coconut (optional)
- light whipped cream (optional)
💭Top Tip
Unsweetened coconut makes a great garnish, especially if you toast it! Just be sure to add the extra point if you use it and are following the WW program!

To toast coconut:
- Preheat oven to 325 degrees F/175 degrees C .
- Spread coconut evenly on a rimmed baking sheet.
- Bake until lightly golden and fragrant, stirring frequently, about 5 to 10 minutes.
- Store leftovers in a ziplock freezer bag in the fridge for up to a week and in the freezer for up to 3 months.

Ingredients
- ¾ teaspoon coconut extract
- 388 ml - can of crushed pineapple (with juice )
- 2 ½ cups ice
- 6 tablespoon light coconut milk
- ¾ tsp rum extract
- 1 tsp agave syrup
Garnish
- maraschino cherry with stem
- pineapple piece

Instructions
- Add pineapple and juice, light coconut milk, coconut extract, rum extract and ice to the blender and blend until smooth. * If you are spiking it with actual rum, leave the rum extract out and add that separately to the ones you want to keep as mocktails
