💭What is Farmer's Cheese?
Farmers cheese is also known as Dry-curd cottage cheese (in Canada), or baker's cheese. It is the solid portion, or dry curds, that remains after milk has been cultured and slowly heated. You can use farmers cheese from the grocery store or homemade farmer's cheese recipe in any recipe that calls for it. Although there are different methods, making your own farmer's cheese, with whole milk or heavy cream and a few simple ingredients, is easy.
Farmer's cheese is a crumbly type of cottage cheese with a mild flavor (similar to mozzarella) but is a little tangier (though not as tangy) as regular cottage cheese. It's great on its own or with a little salt and black pepper or with berries.
American-Style Farmer’s Cheese is essentially cottage cheese that has been pressed to remove water. It's a variant of cottage cheese, made by pressing the whey from the curds (compared to just draining). It has a firmer texture than cottage cheese because of the lower moisture content and is cut into curds, drained, and pressed, creating a drier texture. *This is the type of Farmer's cheese that is best to use for these recipes. We typically refer to it as Dry Cottage Cheese or Dry Curd Cheese in Canada.
European-style farmer’s cheese- the process of making this style of farmer's cheese is a little different so it results in a creamier, more spreadable texture.
💭Why use Farmer's Cheese?
I prefer to use farmer's cheese/dry curd cottage cheese instead of regular cottage cheese in many cottage cheese recipes, especially those using higher heat. Regular cottage cheese contains milk and when milk is overheated or has an acid added to it, it can curdle. When milk curdles, it separates into curds and whey. The whey, or liquid, is separated from the curds, or the solids.
Farmers cheese is also low-fat so perfect for lightening up recipes and using in place of cottage cheese (when you don't want the liquid content).
