Natrually sweetened and loaded with healthy seeds, nuts, fruit, chocolate, and oats, these No Bake Almond Butter Granola Bars are delicious, wholesome, hearty, and easy to make! They make an ideal breakfast, snack, or dessert and are ideal for packing in a lunch bag!
Spray granola bar molds or 8x8 pan with non-stick cooking spray.
Mix dry ingredients together in a large bowl.
2 cups quick rolled oats, ½ cup pumpkin seeds, ⅓ cup chopped pecans, ¼ cup shredded unsweetened coconut, ¾ cup dried cherries, ⅓ cup mini chocolate chips, 2 tbsps chia seeds, 1 tablespoon sesame seeds, 1 teaspoon cinnamon
Melt coconut oil, almond butter and honey together on the stovetop on medium low, stirring frequently. Remove when it's fully combined and melted *Watch carefully because it can burn! You will want to remove it from the heat as soon as it has melted together.
⅔ cup almond butter, ¼ cup honey, 2 tbsps coconut oil
Pour liquid ingredients into dry ingredients and mix until fully incorporated.
If you have molds you can fill them or shape them into bars on your own. Alternatively, you can make them in an 8x8 pan or double the recipe and make them in a 9x13 pan. Place in refrigerator to set for at least 2 hours or overnight.
Unmold when hardened.
