Instructions
Combine rhubarb with all other ingredients in medium saucepan, except vanilla extract.
Bring to a simmer over medium-high heat.
Reduce heat to a gentle simmer and cook until the rhubarb begins to break down, about 15 minutes.
Remove from heat, add vanilla and stir.
Cool and serve.
Notes

Makes about 2 cups - serving is 2 tbsp
