This Healthy Rhubarb Bread is light, moist, and delicious! It's also loaded with healthy ingredients like Greek yogurt, unsweetened coconut, and applesauce, orange, whole wheat and cinnamon. You can use fresh or frozen rhubarb and it makes a great breakfast, snack or dessert.

Preheat oven to 375 degrees F/190 degrees C. Spray 2 loaf pans
Stir two types of flours, baking powder, baking soda, brown sugar, coconut, and cinnamon together in a separate bowl.
1 ½ cup all purpose flour, 1 cup whole wheat flour, ⅓ cup unsweetened coconut (medium), ½ cup brown sugar, 2 teaspoon baking powder, 1 teaspoon baking soda, 1 ½ teaspoon cinnamon
In a large bowl, whisk together oil, greek yogurt, orange juice, orange zest, applesauce, eggs and vanilla extract.
½ cup freshly squeezed orange juice * the juice from about 1 large orange, 1 cup non- fat plain Greek yogurt, 2 eggs, 1 teaspoon vanilla extract, ¼ cup unsweetened applesauce, 1 teaspoon orange zest, ¼ cup vegetable oil
Add the flour mixture to the wet mixture and mix until just combined.
Fold in the chopped rhubarb.
2 cups fresh rhubarb, chopped into ½ inch pieces
Pour into 2 separate loaf pans.
Bake on middle rack for about 40- 50 minutes (or until a cake tester or toothpick comes out clean.)
If the bread is browning too fast on top,(check at 30-35 minutes) loosely cover the top with aluminum foil and return to oven.
Cool for 5 minutes, then move to cooling rack and cool for another 5 minutes. Cut when it's completely cooled.
Garnish (optional)
Sprinkle grated orange and coconut over the top of the loaf
