đź“‹ Halloween Pasta Recipe: Frankenstein Fettuccine
This Frankenstein Fettuccine is a fun and easy Halloween pasta recipe, using a simple fettuccine sauce, green fettuccine noodles, black olives, and parmesan cheese. It's the ideal Frankenstein food and Halloween dinner idea for kids and adults, a horror movie marathon, or a monster-themed party!
Bring 4-5 litres of water to a boil in a large sized pot. Cook as per pasta package directions. *NOTE: I had to boil the Catelli pasta I used for about 20 minutes. Once pasta is cooked al dente, drain and set aside. Add a little butter to prevent pasta from sticking together (do not rinse). Meanwhile, make Alfredo sauce: melt butter over medium heat in the same pot you used to cook the noodles (don't worry if there are a couple of noodles stuck to the bottom)
375 g - package of fettuccine noodles, 4 tablespoon butter
Slowly pour in milk, whisking continuously as you pour, until combined. Add parmesan cheese and garlic, continue to whisk until cheese melts into the mixture and becomes smooth. Continue to cook over medium heat, whisking until sauce becomes thick. *You want it to be the consistency of gravy
Whisk in green food coloring (add color with a toothpick until you get the hue you want).
½ teaspoon green food coloring (leaf green)
Continue to whisk until color is evenly distributed. Once sauce thickens, remove from heat. Pour pasta into pot and mix well. *Sauce will thicken as it cools
Assembly
Spray an 8X8 square cake pan with non-stick cooking spray and pack pasta into it with a spoon, compressing as much as you can.
Put a large square plate or platter (white, if possible) on top of pan.
Flip pan over.
Gently remove pan
Garnish/Decorations
Slice black olives in half for hair and place at the top, as shown. Place 1 half for nose. For mouth, scar and eyebrows, slice each olive in 4 and place as shown. Add 2 whole olives to the sides, as shown. For eyes: use a round cookie cutter (or something similar) and pour parmesan cheese for whites of eyes. Add a whole black olive for each eye.

Serve warm with garlic toast and salad.

Use naturally green pasta for best results: Spinach or spinach–garlic fettuccine gives this dish a bright green hue and a healthy twist. You’ll need less food coloring, and it adds a subtle flavor too.
Add food coloring gradually: Use a toothpick to add a small amount at a time and whisk well between additions. It’s easier to darken the color than to fix an overly vibrant green.
Don’t overcook the pasta: Slightly undercooked (al dente) noodles hold up better when packed into the pan and flipped for the Frankenstein shape.
Pack the noodles tightly: Compressing the pasta firmly into the pan helps it hold the face shape when flipped onto the serving plate.
Use a non-stick spray or parchment lining: This prevents the pasta from sticking to the pan so the face comes out clean and intact.
Assemble right before serving: Decorate the Frankenstein face just before serving so the olives stay glossy and the Parmesan “eyes” don’t absorb moisture.
Adjust sauce consistency if needed: The Alfredo sauce thickens as it cools. If it becomes too thick, whisk in a small amount of warm milk until smooth again.
Customize the face: Get creative with the decorations — try sliced red bell pepper for scars, or small mozzarella rounds for eyes if you prefer.
