Avocado Tacos are made with seasoned ground beef, cheese, onions, tomatoes and bits of crunchy taco shells in avocado halves. They are a delicious way to enjoy tacos but without all the calories and carbs! And they are the ideal light taco night recipe.

Brown ground beef in a skillet over medium heat (I add chopped onion) and drain.
Add 2 tablespoon water and taco seasoning and cook over low heat until water and seasoning are absorbed.*If your ground beef is cooked, you can also add the water and seasoning and heat in the microwave for 1-2 minutes on high and stir together (as shown)
Cut avocados in half and remove the pit.
Add seasoned ground beef, tomatoes, and onions to avocado halves, dividing ingredients evenly by all 8 avocado halves.
Add cheese and crunched up taco shell, dividing evenly by all 8 avocado halves.
Add salsa, sour cream, and cilantro as desired. Squeeze fresh lime juice over avocado tacos, if desired.
