These No-Bake Matcha Pistachio Energy Bites feature a zesty blend of matcha, pistachios, almond butter, coconut, and dried apricots. In a small bowl, whisk together 4 tablespoon of water with 3 tablespoon of matcha powder
3 tablespoon matcha powder, 4 tablespoon warm water
In a large mixing bowl, mix almond butter, agave, vanilla, agave syrup, vanilla extract, coconut, chia, dried apricots, quick oats, ground pistachios.
½ cup almond butter, 3 tablespoon agave syrup or substitute (4 tablespoons liquid honey), 1 teaspoon vanilla extract, 1 cup quick oats, ⅔ cup unsweetened coconut, ½ cup chia seeds, ¼ cup ground pistachios, ¼ cup finely chopped dried apricots
Mix in the match water mixture.
Lay parchment paper on a cookie sheet. Shape into 1- 1 ½ -inch balls and space apart on cookie sheet. ** I find it helpful to wet my hands when I am forming the mixture into balls.
Freeze for 4-6 hours or overnight.
Optional Garnish
Mix 1:1 mixture of match powder and powdered sugar and roll energy balls in it (about 2 tablespoon of each).
