These Healthy Saskatoon Berry Oatmeal Bars are a protein-packed powerhouse! By blending hearty oats with cooked quinoa, these bars offer a complete protein snack that is naturally sweetened with honey and applesauce. They are chewy, nutty, and bursting with prairie berry flavor. Perfect for a grab-and-go breakfast, a healthy school lunchbox addition, or a guilt-free dessert, these bars are freezer-friendly and work beautifully with fresh or frozen berries.
Preheat oven to 350°F (175°C). Spray an 8x8 pan with non-stick cooking spray.
In a large bowl, whisk the eggs, milk, applesauce, honey, almond butter, and extracts until smooth.
⅔ cup Milk, ½ cup Unsweetened Applesauce, ⅓ cup Liquid Honey, ¼ cup almond butter, 2 Eggs, 1 teaspoon Vanilla extract
In a separate bowl, stir together the oats, cooked quinoa, flour, coconut, baking powder, soda, cinnamon, salt, and 2 tbsps of the brown sugar.
1 ½ cups Rolled Oats, 1 ¼ cups Cooked Quinoa, ¼ cup All-Purpose Flour, ¼ cup Unsweetened shredded coconut, 1 teaspoon Baking Powder, ½ teaspoons Baking Soda, 1 teaspoon Cinnamon, ¼ teaspoon Salt, 2 tablespoons Brown Sugar
Pour the dry into the wet. Stir until just combined.
Gently fold in the Saskatoon berries.
