Expert Tips:
The 2-Minute Sear:Â Don't skip browning the pork! Searing the meat for 2 minutes per side "sets" the exterior and ensures the chops stay juicy rather than steaming in the sauce.
Sauce Consistency:Â If the sauce is too thick for your liking, whisk in a tablespoon of milk or water. If you want it even creamier, stir in a dollop of non-fat Greek yogurt at the very end.
Deglaze the Pan:Â After browning the pork, add your water and salsa to the pan and scrape up any brown bits (the fond). Those bits are packed with savory flavor that will make your sauce taste homemade.
Weight Watchers Points:This recipe is a spectacular way to enjoy a creamy dinner without the "point guilt." By using 98% fat-free cream of mushroom soup and lean pork loin, the sauce itself is only 1–2 WW points per serving. It’s an incredible high-protein solution for a busy weeknight when you need to stay on track!
