A delicious and refreshing Greek pasta salad recipe made with feta, cucumbers, tomatoes and fresh herbs in only 20 minutes! It's WW friendly at only 5 points on the blue plan. Perfect summer BBQ or potluck idea!

3cupstri-color rotinior any spiral pasta
¼cupmedium red oniondiced
½ a seedless cucumberdiced
1red pepperseeded and diced
¾cuplight feta cheese
½cupblack Kalamata olivesI also use the pre-sliced ones if I feel extra lazy -they don't look as nice, but they save you the hassle of dealing with pits and/or chopping
4.5tablespoonfreshly squeezed lemon juice
3tablespooneach chopped fresh mint and basil
additional fresh basil and mint, as desired
fresh lemon wedges, if desired
Cook pasta in water until tender, but still firm. Drain and rinse with cool water until cooled.
In large serving bowl, combine cooked pasta and remaining ingredients, tossing well. Serve.
May be refrigerated for up to 2 days.
