This Easy Oatmeal Raisin cookie recipe is a drop cookie made with quick oats. They are fast to make and so simple you won't believe how incredibly delicious they taste! They make a great snack or lunchbox dessert!
Beat butter, sugars and egg together until light and fluffy. Add vanilla.
In separate bowl add flour and baking powder, then add into wet mixture.
Stir in quick cooking rolled oats and raisins.
Drop by teaspoonful onto ungreased baking sheets about 2 inches apart. Bake for about 10 minutes or until bottoms are lightly browned.
💭 How to Store Keep these cookies on the counter (in an airtight container) for 2-3 days or put them right into the freezer! I put them right into the freezer, then I take them out and by the time I go to eat them at work, they are defrosted. Or you can pop them into the microwave for 15-20 seconds to defrost. They will keep in an airtight container or freezer bag in the deep freezer for up to 6 months.
