This quick and easy Rocky Road Frozen Greek Yogurt Bark is a cold chocolate frozen yogurt treat on a hot day that is easy, quick, and as refreshing as ice cream, but with less guilt! It's WW friendly at 3 points.
Line a baking sheet (9"X11") with parchment paper and set aside.
Pour Chocolate Greek yogurt onto prepared baking sheet and with a spatula, spread into a thin layer (about ¼ - ½ inch thick).
Bang baking sheet (up and down) a few times on the counter to remove air bubbles and distribute evenly. *You may need to do this several times.
Spread remaining ingredients evenly over yogurt base, trying to distribute as evenly as possible.
Place in the freezer for 6-8 hours, or overnight, until the bark is fully frozen.
Break apart or slice into squares.
Serve immediately (on square pieces of parchment or wax paper to avoid sticky fingers) and keep stored in the freezer in an airtight container or bag.
Notes
*Note: I used a little more unsweetened cocoa powder in the process shots and that's why the frozen yogurt bark looks darker. I was also using different lighting.EXPERT RECIPE TIPS:
Tap the Tray to Remove Air Bubbles. After spreading the yogurt on the baking sheet, tap the tray firmly on the counter a few times to remove air bubbles. This helps the bark freeze evenly and avoids an uneven texture.
Use Parchment Paper for Easy Removal. Always line your baking sheet with parchment paper to make removing the frozen bark a breeze. This also prevents sticking, making cleanup faster.
Spread the Yogurt Evenly. Aim for a uniform thickness of about ¼ to ½ inch when spreading the yogurt. If it’s too thick, it will take longer to freeze; if it’s too thin, it may break apart too easily.
Distribute Toppings Evenly. Sprinkle the toppings evenly across the yogurt layer for balanced flavor in every bite. Press lightly into the yogurt so they adhere better during freezing.
Freeze Flat for Best Results. Ensure the baking sheet lies flat in your freezer to prevent the yogurt layer from pooling on one side.
Use a Serrated Knife for Clean Cuts. For cleaner, more uniform pieces, use a serrated knife to slice the frozen bark instead of breaking it by hand.
