This easy recipe uses superfood matcha and blue spirulina to create a beautiful green and blue world map effect without a single drop of artificial food dye. Mix together just until combined. It will be a little lumpy. Don't overmix.
Stir matcha with a little warm water to make a paste. *This helps prevent dry lumps.
3 teaspoons culinary grade matcha powder
Remove ¼- ⅓ of the batter into a separate bowl and add matcha powder to it.
Add blue spriulina to remaining batter.
2 tablespoons blue spirulina powder
Spread blue batter on the prepared sheet pan, then tap on the counter a couple of times to smooth.
Fill a pastry bag or Ziploc bag (with a corner cut off) with the green matcha pancake batter.
Add the green pancake batter on top of the blue. I like to outline the continents first, before I fill them in. Don't worry about it being exact - it just has to look generally like continents on a map
Then fill in the continents. Tap the pan on the counter a couple of times to smooth the batter and reduce air bubbles.
Bake pancakes in preheated oven for 15 minutes or until cake tester comes out clean. *The colors will lighten quite a bit.
Add a little whipped cream to look like clouds (if desired), then cut into 12 pieces and serve.*You can also use a biscuit cutter to cut out "globes" for some of the pancakes.
Butter: Use light butter or even applesauce to bring down the points.
Vegan: Use a flax egg and your favorite plant-based milk and oil.
