By using green matcha and blue spirulina in a healthy pancake batter, with just 15 minutes of baking time, you get a "satellite view" of our planet that the kids will go crazy for! It's the ultimate way to show some love to the planet while keeping your healthy balance perfectly on track

- Blue Spirulina Powder: This is the "It" superfood of 2026! It is 100% natural and virtually tasteless in a sweet batter, giving you that incredible ocean blue . Blue spirulina powder (affiliate link) is a nutrient-dense, vibrant blue extract derived from blue-green algae. It is prized for its antioxidant properties and neutral taste. Unlike green spirulina, it lacks a seaweed smell, making it ideal for smoothies, lattes, and baking.
- Vanilla Extract: Don't skimp! Vanilla is the "flavor bridge" that balances the earthy notes of the superfoods. Use a high-quality vanilla extract.
- Melted Butter: I use unsalted butter to control the saltiness, as the salt content in salted butter varies by brand. However, you can use salted butter and skip the salt in the recipe.
- Baking Powder: Since these are thick sheet-pan pancakes, fresh baking powder is essential for a spectacular, fluffy rise.
- Eggs: These are very thick pancakes. You can make them less puffy/fluffy by using only 2 eggs.
- Milk: I use 1 % milk because I always have it on hand, and it keeps this recipe lighter.

- The Blue Oceans: If you can't find blue spirulina, you can use blue matcha powder (affiliate link). It's from ground butterfly pea flowers.

🔪Step-by-Step: How to Make Earth Day Pancakes
PREP: Preheat the oven to 375 degrees F/190 degrees C and spray a 9x13 pan with non-stick cooking spray or line with parchment paper.

Step 1: Mix flour, baking powder, salt, and sugar together in a large mixing bowl.

Step 2: In a separate medium bowl, beat eggs thoroughly with a whisk or fork.

Step 3: Make a well (a hole) in the center of the dry ingredients.

Step 4: Slowly add the wet mixture (eggs, milk, melted butter, and vanilla extract).

Step 5: Mix wet and dry ingredients together until just combined. It will be a little lumpy. Don't overmix.

Step 6: Stir matcha with a little warm water to make a paste. *This helps prevent dry lumps.

Step 7: Remove about ¼- ⅓ of the batter into a separate bowl and add matcha powder to it.
Add blue spirulina to the remaining batter.

Step 8: Spread blue batter on the prepared sheet pan, then tap on the counter a couple of times to smooth.

Step 9: Fill a pastry bag with the green matcha pancake batter, and cut off the end or use a small round tip with a coupler. You can also use a Ziploc bag (with a corner cut off).

Step 10: Add the green pancake batter on top of the blue. I like to outline the continents first, before I fill them in.
Don't worry about it being exact - it just has to look generally like continents on a map.

Step 11: Then fill in the continents. Tap the pan on the counter a couple of times to smooth the batter and reduce air bubbles.

Step 12: Bake for 15 minutes in a preheated oven. A cake tester will come out clean when the pancakes are ready.
*The colors will lighten quite a bit.

Step 13: Add a little whipped cream to look like clouds (if desired), then cut into 12 pieces.

Step 14 (optional): You could also use a round biscuit cutter to cut some of the slices into small round "globes."

- Freezer: These freeze beautifully for up to 3 months! Reheat in the toaster or air fryer to get that "freshly baked" texture back.

Lighter Version: To get this down to 4 WW points, use light butter substitute and unsweetened almond milk. To further decrease the ww points, use Monk fruit instead of sugar, but only use half the amount (¼ cup).

The matcha has a very subtle, earthy flavor, and although Spirulina is made from seaweed, it has a neutral taste. Both flavors are perfectly balanced by the vanilla and sugar. Kids usually describe it as a "yummy vanilla pancake" and never suspect they are eating superfoods!
I don't recommend it. The baking powder starts reacting immediately once wet. For the fluffiest results, mix and bake immediately.
No problem! You can use a 10-inch or 12-inch round cast iron skillet or a round cake pan to create large "Earth Globe" pancakes instead. The instructions and cook time remain the same, but the round shape adds a whimsical, kid-friendly touch that looks incredible on the brunch table.
