This Ukrainian Breakfast Sandwich is made with a quick microwave poached egg and kielbasa, on a English muffin, with Ukrainian flavors like dill and horseradish. It's a quick and satisfying Ukrainian breakfast!
Spray inside of a coffee mug with non stick cooking spray. Break egg into mug and add in dry cottage cheese and dill. Stir gently for a second and try not to break the yolk.
Put egg mixture into microwave for 30 – 40 seconds (with cover) or until egg is set. Gently loosen by running knife between inside of mug and egg.
Mix sour cream, horseradish and mustard together. Spread evenly on each side of the English muffin.
Top one side of the English muffin with sliced kubasa and gently slide the cooked egg out of the mug and on top kubasa.
Add sliced tomato. Top with other half of English muffin.
