These NO BAKE Healthy Chocolate Cereal Clusters are a quick, easy and portable Weight Watchers dessert or snack! Made with just 5 wholesome ingredient, they are only 4 Weight Watchers points.
Mix finely chopped apricots, sunflower seeds, coconut and Rice Chex Cereal together in a bowl.
Melt chocolate in a microwave safe bowl at 50% power for about 2 minutes, then remove and stir with a spatula. Return for another 30 seconds, then remove and stir again. Return to the microwave for an additional 30 seconds (this will be 3 minutes in total) and stir. If it is not completely melted by this point, return to microwave for 10 seconds at a time, stirring between until melted. * Alternatively you can use a double boiler and melt your chocolate on the stove top.
Add the cereal mixture to the melted chocolate and combine.
Make sure the mixture is completely covered in chocolate.
Drop by tablespoons full onto a parchment paper lined cookie sheet, dividing equally between 15 clusters
Chill for 10 -15 minutes or until set. Store in the fridge or freezer (they will last longer in the freezer)

Recipe Tips
Avoid Overheating Chocolate: When melting chocolate in the microwave, always use 50% power and stir frequently. Overheating can cause the chocolate to seize, making it grainy. If it starts to thicken, add 1–2 teaspoons of coconut oil or butter to bring it back to a smooth consistency. And do not let the chocolate or utensils/bowls you are working with come into contact with water, as this will also cause the chocolate to seize.
Work Quickly: Once the cereal mixture is added to the melted chocolate, work quickly to form clusters before the chocolate starts to harden. If the mixture begins to set, gently warm it again to loosen it up.
Chop Dried Apricots Finely: Ensure the dried apricots are chopped into small, even pieces. This helps them mix well with the other ingredients and ensures every bite has a balance of sweetness and chewiness. You can use a food processor to do this.
Portion Evenly: Use a small cookie scoop or measuring spoon to portion out the clusters. This ensures consistent sizing, which helps with even setting and accurate WW points calculation.
Chill Thoroughly: Let the clusters chill in the fridge or freezer until fully set before transferring them to a storage container. This prevents them from sticking together
📖 Variations
cereal - you can use a different cereal (like corn flakes or rice krispies) but just be sure to account for WW points
dried fruit- I have also used dried cherries in place of dried apricots
🌡️StoringI pop these right into the freezer (in a ziplock freezer bag) once they harden so they last longer - they last up to 3 months in the freezer. They defrost quickly so you don't even need to microwave them. However, if you're in a hurry, you can microwave them for 10 seconds. You can also store them in the fridge, in a sealed container, for up to a week.
