I load my nachos with light (low-fat) cheddar cheese, black olives, green onions, jalapenos and lots of this pico de gallo, served with sour cream and guacamole on the side! Expert Recipe Tips:
The "Serrated" Secret:Â Use a sharp serrated knife (like a bread knife) to dice your tomatoes. It grips the skin without squishing the tomato, giving you perfect, clean cubes.
Seed the Tomatoes:Â If you want a very "dry" chunky salsa, scoop out the watery seeds/pulp of the Roma tomatoes before dicing the flesh.
The "Meld" Period: While you can eat this immediately, it is even better if you let it sit in the fridge for 30 minutes. The salt draws out just enough juice to create a natural dressing.
Uniform Dicing:Â Try to dice everything to be roughly the same size (about the size of a kernel of corn) for the best mouthfeel.
