Notes
Expert Recipe Tips:Whisk well before microwaving. Beating the eggs thoroughly with the water helps incorporate air, which makes the omelette light and fluffy.Use water, not milk. A small splash of water steams the eggs as they cook, helping them rise and stay tender without adding extra calories or WW points.Microwave in intervals. Cooking in short bursts and stirring in between prevents overcooking and ensures the eggs cook evenly.Don’t overfill the mug. Keep fillings to about 2–3 tablespoons total. Too many add-ins can prevent the omelette from cooking through and may cause overflow.Grease the mug well. A good coating of non-stick spray or a light brushing of oil makes cleanup easier and allows you to slide the omelette onto a plate if you prefer not to eat it from the mug.Adjust cooking time to your microwave. Microwaves vary in wattage, so start with less time and add in 10–15 second increments until the eggs are set.Add cheese at the end for extra melt. If you like gooey, melted cheese, sprinkle a little on top right after cooking and let it sit for 1–2 minutes to melt from the residual heat.Experiment with flavors. Try different combinations like spinach and feta, mushrooms and peppers, or salsa and jalapeños for variety without adding prep time.
