This Cowboy Caviar Dip is quick and easy to make with canned corn, canned beans and Cannellini beans as a substitute for black eyed peas. The fresh veggies, cilantro and lime give it a fresh taste! It's Weight Watchers friendly at only 1 WW points on the blue plan!

3Roma tomatoes, diced
1/3cupred onion, diced
341ml canned corn, drained and rinsed or use frozen corn, defrosted
540mlblack beans, drained and rinsed
398mlcan white Cannellini beans, drained and rinsed
1green bell pepper, diced
1red pepper, diced
3tbspjalapeno peppers, chopped* I use jarred 'tamed jalapenos' - add more or less to your liking
Combine tomatoes, onion, black beans, Cannellini beans, corn, peppers, jalapeno pepper, and cilantro in a large bowl. Toss/stir well so that ingredients are well-combined.
In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic.
Pour dressing over other ingredients and stir/toss until well combined.
Homemade Tortilla chips
Preheat oven to 400 degrees.
Spray a baking sheet with non stick cooking spray or line with parchment paper.
Stack tortillas and cut into 6 triangles.
Lay tortillas on baking sheet, in a single layer, spinkle with salt and bake 6-8 minutes or until lightly browned.
Sprinkle with additional salt, if desired, cool and serve with cowboy caviar dip.
*NOTE: Makes about 7.5 cups. You will get about 30 servings @ 1/4 cup**NOTE: I used the WW calculator on the app to calculate this recipe. If you are on another plan besides blue, you may get a higher WW points count if you use the nutritional information below to figure out the points. I would recommend you use the WW calculator. For some reason, this nutritional information was not giving me an accurate points count. I originally calculated this recipe at 2 WW pts, but when I put it into the app (which is more accurate) it shows 1 WW pt.
