Air Fryer Chicken Fajitas are an easy, scrumptious and healthy meal that is perfect for anyone looking for a low-carb, low-calorie and WW friendly option. This recipe makes a great weeknight meal and is ideal for your Cinco de Mayo celebrations!

PREP: Cut onion into rounds, then in half and separate and slice peppers. Cut chicken into strips.HINT: Don't cut your peppers or onions too thin or they will burn!
Toss sliced chicken, onions, peppers, spice mix, lime juice and oil in a large bowl.
Mix until the chicken and vegetables are fully coated.
Add to air fryer drawers or baskets. *I keep the trays/grates in
Set on 390 degrees F (198 degrees C). Cook for 15 - 20 minutes, stopping at 5 minute interval to shake or stir.
It will be ready when chicken pieces are cooked through and no longer pink (reach internal temperature of 165 degrees F/ 74 degrees C) and vegetables are tender.
How to fold a fajita
Add filling to the middle of the tortilla and add a little bit of the sauces etc. here as well (salsa, sour cream, cilantro, guacamole or squirt some fresh lime)
Fold the tortilla over on one side, (over the filling in the middle)
Fold tortilla up from the bottom
Keep rolling over (from the folded side, while you keep the bottom tucked in) until it's completely folded over
Serve with toppings like salsa, sour cream, fresh cilantro, guacamole, with rice or Mexican corn
