Expert Tips
Folding the whipped cream. When folding the whipped cream into the mascarpone mixture, use a gentle, sweeping motion to preserve the airiness. Overmixing can deflate the cream and result in a denser filling.
Mascarpone Cheese: Use quality ingredients and opt for authentic Italian mascarpone for the creamiest and most authentic flavor. Avoid using low-fat substitutes as they may not yield the same texture.
Blind Baking the Tart Shells. If you are using homemade tart shells, to prevent the tart shells from shrinking, press the dough firmly into the tart molds and let them chill in the fridge for 15-20 minutes before baking.
Room Temperature Ingredients. Ensure mascarpone cheese and coffee are at room temperature before mixing to prevent the filling from curdling.
