When I went searching for a Pina Colada popsicle recipe last year, all I could find were long and involved recipes. Some even required cooking a mix on the stove.
🥘 Ingredient Notes
This recipe for homemade pina colada popsicles is fast and oh-so-easy, so no cooking is required! And the best part is... You only need a few ingredients:

- Pina colada drink mix (affiliate link): You can buy Pina Colada drink mix in most grocery stores in the drink aisle.
- Whipping cream (aka heavy cream). Ensure it's 33% to 36% fat.
- Crushed pineapple. Make sure it's drained and all the liquid is squeezed out through a sieve.

For one thing, it's summer - I don't want to cook popsicles on my stovetop! I just wanted something quick and easy, so I made my own recipe the easy way - with a Pina Colada drink mix.
Fair warning- this frozen pina colada recipe is indulgent! But sometimes you just need indulgent cool treats....it's all about balance anyway. BUT you can make it WW friendly, if you'd like (see variations and substitutions below).
📖 Variations & Substitutions
- Rum: There is no alcohol in this pina colada popsicle, although you are more welcome to add some for the adults in the room. However, you'll have to reduce the same amount of liquid as the alcohol you add. For example, if you add 2 tbsps of white rum, then reduce the whipping cream in the recipe by 2 tbsps.
- Rum Flavor: You can also add ½ teaspoon of rum extract for a rum flavor, even in the non-alcoholic version of the popsicle.
- Pineapple: You can use fresh fruit (fresh pineapple chunks) instead of canned if you prefer
- Vegan: Use coconut cream or canned coconut milk in place of whipping cream, and a dairy-free yogurt substitute like coconut or almond yogurt. Just note that the texture may change slightly.

WEIGHT WATCHERS FRIENDLY VERSION
You will get 8 pineapple coconut popsicles, and each popsicle will be 2 WW points. These were inspired by my Healthy Pina Colada Recipe (mocktail) - it's one of my favorite drinks. And these popsicles are like having a pina colada in popsicle form!
- 1 cup Skinny Mix: Pina Colada Cocktail Flavoring (affiliate link)
- ⅔ cup 0% (non-fat) Greek yogurt (yogurt is increased from ½ cup)
- 1 cup light coconut milk (in place of whipping cream) *this will give it an added boost of coconut flavor
- ⅓ cup canned crushed pineapple.
🔪How to Make Pina Colada Popsicles

- Step 1: Add all ingredients together in large bowl.

- Step 2: Whisk until combined.

- Step 3: Transfer to a measuring cup or bowl with a pour spout (or something that's easy to pour with.

- Step 4: Pour an even amount into popsicle molds. Tap a couple of times on a hard surface to remove air.

- Step 5: Freeze upright until solid, about 8 - 10 hours, depending on the thickness of the molds. *I put them on an old sheet pan that will fit in my freezer When they are frozen solid, run them under cold water to loosen the molds and serve!
Expert Recipe Tips
- Drain the pineapple really well. Squeeze out as much liquid from the crushed pineapple as possible using a fine mesh sieve or cheesecloth. Excess moisture can cause icy texture and throw off the creaminess.
- Whisk until smooth. Thoroughly combine the thick cream, yogurt, and drink mix to ensure an even distribution of flavors and avoid separation during freezing.
- Use a pourable container. After mixing, transfer the mixture to a large measuring cup or bowl with a spout to make it easier to pour into molds cleanly and evenly.
- Tap molds to release air bubbles. Gently tapping the molds on the counter helps prevent gaps or cracks in the popsicles once frozen.
- Don't overfill the molds. Leave about ¼ inch of space at the top of each mold to allow for expansion during freezing and prevent overflow.
- Run under cold water to release. Using cold water helps popsicles slide out more cleanly without melting the surface layer too quickly.
- Use stainless steel molds for best results. Stainless steel molds freeze faster, last longer, and help the popsicles release more easily.
- Taste before freezing. If you're experimenting with substitutions like alcohol or yogurt alternatives, tasting the mixture first lets you adjust sweetness or flavor balance.
- Label them if making multiple flavors. Label molds or use different sticks to avoid mix-ups, especially when making alcoholic and non-alcoholic versions.
- Serve with garnishes for fun presentation. Pineapple wedges, maraschino cherries, or coconut flakes add a festive tropical touch for parties and BBQs.
🥗 What to Eat with Pina Colada Ice Pops
Pina Colada Ice Pops are a great summer snack or dessert! I like to serve them after a summer meal such as Zucchini Ground Beef Lasagna (shown) or this Creamy Bacon Ranch Chicken Pasta Salad.

🍽 Equipment
You will need popsicle molds for these pina colada ice pops, and you can use any type, although I recommend stainless steel molds (affiliate link). They just work so much better and last forever. I can't tell you how many different types of plastic molds I've tried, only to be disappointed time after time! You will also need popsicle sticks if your molds don't have them.

🌡️Storing
The best way to store this virgin piña colada popsicle recipe is in the freezer, in their molds. Then you can simply take them out as needed and run the part of the mold you want to use under cold water. Even if they defrost a little, they'll freeze up again.
However, they will only last a couple of weeks in the freezer, then they start to get icy.

Yes, but the texture will be less creamy and more icy. Whipping cream gives these popsicles their rich, indulgent texture. For a lighter version, canned light coconut milk works well, as noted in the WW version.
No blender needed! Everything is whisked together in a bowl-no need to dirty extra equipment.
Yes, silicone molds work well too. They're flexible and make it easier to release the popsicles, though they may take slightly longer to freeze through.
Because of the high-fat content from cream, they hold their shape a bit longer than juice-based popsicles, but they'll still melt quickly in hot weather-so enjoy them right out of the freezer!
