This Healthy Strawberry Yogurt Popsicle recipe is made with a few simple ingredients, is easy to make, and makes a great dessert or snack! Made with fresh or frozen strawberries, non-fat Greek yogurt, and coconut, they are both WW friendly and kid-friendly. It's the perfect treat for the whole family!

These homemade popsicles are popular during the summer months, but they are great any time of the year when you want a frozen treat. This was inspired by my Strawberry Drumstick Frozen Yogurt Cups and is the perfect sweet treat on a hot summer day, especially after a summer meal like this Slow Cooker Beef on a Bun. These popsicles are a healthy treat and a great way to get your ice cream fix, without all the calories!

🥘Ingredient Notes
You'll need the following ingredients for these homemade strawberry yogurt popsicles:

- Yogurt. Plain non-fat Greek yogurt (0%) works the best and it is 0 ww points!
- Agave. Agave is sweeter than honey so you use less.
- Coconut extract. Gives these popsicles a unique and delicious flavor!

📖Variations & Substitutions
- Yogurt- I use non-fat Greek yogurt, but you can use full-fat, vanilla Greek yogurt, regular plain yogurt, or vanilla yogurt. But keep in mind, that your popsicles will be icier if you use regular yogurt because it contains more water than Greek yogurt.
- Agave - you can substitute honey, but you'll need twice the amount. Alternatively, you could use maple syrup or an artificial sweetener (if you are okay with using that).
- Strawberries- you can use fresh or frozen strawberries, but if you use frozen, just make sure to defrost and drain, then measure or the popsicles will be too watery. You could also substitute another type of fresh fruit, such as blueberries or raspberries.
- Coconut extract- although you can get coconut extract at most grocery stores if you can't find it or don't have it and don't want to run out to the grocery store, you can substitute vanilla if you can't get coconut, or use another type of extract.
- Lactose-free - Use lactose-free Greek yogurt instead of regular Greek yogurt.
🔪How to Make Strawberry Yogurt Popsicles
This healthy popsicle recipe only takes a few minutes of prep time.

You don't need to make a strawberry puree, just add everything, except shredded coconut, to the blender (hulled, chopped strawberries, Greek yogurt, agave, and coconut extract)

Blend until smooth (about 30-60 seconds).

Pour yogurt mixture into popsicle molds. *Be sure to leave about ¼ inch at the top for expansion.

Add covers/lids and popsicle sticks.
Freeze for 6- 8 hours or overnight until solid.

Garnish (optional): When the popsicles are ready, add shredded coconut to a small bowl and dip the popsicles
Hint: wet the tip of the popsicle with a little cold water before you dip it in the coconut - it will stick better
Recipe Tips
- Run your popsicle molds under COLD water. Running your popsicles under cold water instead of warm water, helps the popsicles to slide out of the molds easily.
- Use stainless steel popsicle molds. I highly recommend getting a stainless steel set of popsicle molds (like the ones in the photos) - this is my very favorite popsicle mold!
- Avoid Icy Popsicles. Blend thoroughly to fully incorporate all ingredients and avoid separation during freezing. A small amount of cornstarch (½ tsp) can help prevent ice crystals.

🌡️Storage
Store these strawberry popsicles in the molds in the freezer until ready to eat. They will last up to 2 months in the freezer, but if you're storing them longer than a week, you'll want to put them in a large freezer bag.
❔ Recipe FAQ's
If you use regular yogurt, your popsicles will be icier than if you use Greek yogurt because Greek yogurt contains less water. If you want a creamy texture, I recommend using Greek yogurt in your popsicles.
You can use ice cube trays in place of molds. Simply use large toothpicks in place of the "popsicle sticks".
