These Slow Cooker Mediterranean Stuffed Chicken Breasts are an easy and delicious meal bursting with Mediterranean flavors! A healthy low carb dinner that's also WW-friendly at only 4 points per serving, these slow cooker stuffed chicken breasts are the ideal 'set it and forget it' crock pot meal that's ready in 4 hours!
This recipe is especially popular in the fall, but great for any time of the year. It was inspired by my Mediterranean Rice Cup recipe and my Grilled Greek Chicken Burgers.

🥘Ingredients
You will need the following simple ingredients for this Mediterranean Stuffed Chicken Breast:
- 5-6 boneless skinless chicken breasts (about 2 lbs)
- ½ cup Greek feta cheese, crumbled * I use light/low-fat feta cheese
- 1 ½ cups chopped fresh spinach leaves
- ¼ cup oil packed sundried tomatoes, drained and chopped
- 2 tsps fresh basil
- 2 garlic cloves, minced
- 1 teaspoon lemon zest
- 15-ounce can of diced tomatoes, undrained
- ¼ cup Kalamata olives pitted and chopped
- black pepper (optional)
- sea salt (optional)
- Garnish: ½ cup whole pitted Kalamata olives
🔪Instructions
- Step 1: Combine feta, spinach, lemon zest, basil, sundried tomatoes, chopped olives, and garlic in a large bowl.
- Step 2: Mix well.
- Step 3: Pat chicken dry with paper towel. Make a horizontal slit at the thickest part of the chicken breast (but don't cut all the way through the middle, so it's butterflied).
- Step 4: Place a piece of plastic wrap over each piece of chicken.
- Step 5: Using a tenderizer, mallet or heavy rolling pin, pound chicken breasts until about ¼ inch thick. Repeat for all pieces.
- Step 6: Lay pounded chicken smooth side down on work surface. Place about 2 tbsps of spinach feta mixture on wide end of breast.
- Step 7: Roll tightly. Repeat with remaining chicken, dividing the mix evenly by all the pieces of chicken. *See VIDEO: How to roll a chicken breast
- Step 8: Place rolled chicken seam-side down in a single layer in the bottom of slow cooker. *You can add toothpick(s) as I did, so they hold together well (just remember to take them out before serving!)
- Step 9: Top with diced tomatoes and juice (do not drain liquid from tomatoes)
- Step 10: Cook for 4 hours on high or 5.5 -6 hours on low. Garnish with additional Kalamata olives and fresh basil leaves and serve over rice, cauliflower rice or polenta. *The internal temperature of the chicken should be 165 degrees F
Hint: Do not pound the chicken too hard or too thin- you want it to be at least ¼ inch thick
📖 Variations & Substitutions
- Olives - you can use regular black olives instead of Kalamata olives, but they won't have the same depth of flavor
- Herbs-you can use fresh oregano or mint instead of basil. If you use dried herbs instead of fresh herbs, you only need ½ the amount (1 tsp)
- Feta Cheese - you can use regular, light or fat-free
- Spinach- you can use regular spinach or baby spinach. You could also use frozen spinach, but just make sure you defrost it first and squeeze out all excess liquid.
- Sun-dried Tomatoes - you could use dehydrated sundried tomatoes (hydrated) instead of sundried tomatoes in oil. You could also use red peppers instead of sundried tomatoes.
- Chicken - you can use defrosted frozen chicken breasts, but I don't recommend it. I would buy chilled chicken and not freeze it prior to making this.
- Spicy - add red chili flakes

🦺Food safety
- Cook chicken to a minimum temperature of 165 °F (74 °C)
- Do not use the same utensils on cooked food, that previously touched raw meat
- Wash hands after touching raw meat
- Don't leave food sitting out at room temperature for extended periods
- Never leave cooking food unattended
- Use oils with high smoking point to avoid harmful compounds
- Always have good ventilation when using a gas stove
