These popsicles were inspired by my Creamy Coconut Blue Raspberry Slushies which are extremely popular on Pinterest! I thought it would be really fun to turn this drink into blue raspberry ice pops!
🥘 Ingredients
I use a Blue Raspberry Martini Mix in these blue raspberry popsicles because it makes them quick and easy to prepare. I also use light coconut milk and sparkling water to bring the calories, sugar and fat down because the blue raspberry mix has a lot of sugar. The coconut extract gives the popsicle a deeper coconut flavor that balances the tart from the blue raspberry. And frozen raspberries add a nice color and texture to this popsicle.
For these blue raspberry popsicles, you'll need:
- light coconut milk
- sparkling water (lemon or lime)
- blue raspberry martini mix
- frozen raspberries
- coconut extract
- unsweetened coconut flakes
- blue sprinkles

For my American friends, these red, white and blue popsicles are the perfect 4th of July celebration treat! Not only are they quick to make, they are unique and delicious. And because they are non-alcoholic, they are a great summer celebration ice pop for adults and kids. My kids couldn't get enough of them!
🔪 Instructions: How to make Blue Raspberry Popsicles
I quickly mix everything together, pour into popsicle molds and freeze overnight. I recommend you freeze for an hour or two, then add your popsicle sticks, as they will stay in place that way (unless you uses the ones that come with your mold).
💭 Top tip
Run your popsicle molds under COLD WATER, not hot: I was also told to run my popsicles under warm water, but I learned that running your popsicles under COLD water (to loosen them from the molds) actually works much better!
🍽 Equipment
You will need popsicle molds and you can use any type, though I recommend stainless steel popsicle molds (affiliate link). They just work so much better and last forever. I can't tell you how many different types of plastic molds I've tried, only to be disappointed time after time.

No, blue raspberries are not real. There are no actual blue raspberries in existence, but there is actually fruit behind the bright blue color. Known formally as" Rubus leucodermis", but more commonly as White Bark Raspberry, this fruit used in blue raspberry flavor is not exactly a raspberry. This berry has a texture akin to a blackberry and a tarter flavor. The actual berry is a reddish purple color at first, turning a deep bluish purple when ripe. But white bark raspberries are NOT blue. It's the food coloring we can thank for the blue part of blue raspberry. The white bark raspberry just happened to be the lucky fruit that was paired alongside the vivid blue dye we've grown to love.

📋Coconut Blue Raspberry Popsicle Recipe
Equipment
- popsicle mould
Ingredients
- ⅔ cup lite coconut milk
- 1 cup sparkling water
- 1 cup blue raspberry martini mix
- 1 cup frozen raspberries
- ½ teaspoon coconut extract
Garnish
- unsweetened coconut flakes
- blue sprinkles
Instructions
- Whisk all ingredients together except frozen raspberries.
- Pour into popsicle molds, dividing evenly between all 8 molds.
- Add raspberries, gently pushing them into moulds, dividing evenly between all 8 molds
- Freeze for 8 hours or overnight.
Garnish
- When popsicles are done, loosen by running under cold water. Then wet the top of each popsicle and dip/roll in blue sprinkles. Then sprinkle on a some unsweetened coconut flakes. Serve immediately.
