This easy Raspberry Mimosa Mocktail is a delicious drink for any celebratory breakfast or brunch and perfect for Mother's Day. As far as I'm concerned, Mimosa's are one of the best cocktails ever invented because what other cocktail can you drink at breakfast or brunch without anyone batting an eyelash?! Especially on Mother's Day?

But what if you can't drink alcohol? Or don't want to drink? OR you simply want your kids to enjoy a special and delicious drink at a celebratory breakfast or brunch? That's where this Mimosa Mocktail comes in...It's the ideal brunch mocktail! It's also a great drink for baby showers, a holiday brunch, and other special occasions.

All you need for this tasty drink recipe is:

This Mimosa uses simple ingredients, has no alcohol but is loadedΒ with flavor! Most of the nonalcoholic Mimosa recipes I've come across don't have the depth of flavor that this one has. And the hint of raspberry and raspberry ice cubes give it that extra something special!
- White grape juice and lemon lime sparkling water. The combination of white grape juice and sparkling water perfectly mimics the Prosecco/sparkling wine in a classic Mimosa.
- Raspberry extract or raspberry flavoring. You can buy raspberry extract (affiliate link) online, but you may also be able to find it at a craft store (such as Michael's) in the cake decorating aisle.
- Frozen raspberries. I love using frozen fruit for ice cubes; it's so much better than boring old ice cubes. You can either buy fresh raspberries and freeze them (as I did ) or simply use frozen raspberries!Β

- Alcohol - And although I love Mimosa cocktails, some mornings it just feels a bit too early for alcohol. But that just depends on the day. So if you're like me and happen to be having a day where you would appreciate the alcohol in this Mimosa, then simply replace the grape juice and sparkling water with Prosecco or sparkling wine (my fave sparkling wine is a Vinho Verde called "Casal Garcia"). You could also use a sparking non-alcholic wine- Leitz is my favorite! But whatever route you choose to go, with or without alcohol, this Raspberry Mimosa Mocktail is a full- bodied, delicious, and refreshing drink.
- Orange juice - you can use orange juice from concentrate, juice boxes or fresh orange juice. You could also Five Alive.
- Raspberry extract - you can substitute raspberry syrup (like Torani) or raspberry puree.
- Lemon-lime sparkling water - you can substitute lemon-lime soda, but it will be sweeter.

Expert Recipe Tips
- Chill Everything First. For the best flavor and fizz, make sure all ingredients (especially the juice and sparkling water) are well chilled before mixing. This keeps the drink cold longer without relying on ice, which can dilute it.
- Use Frozen Raspberries as Ice Cubes. Frozen raspberries keep the drink cold and add a lovely pop of color and flavor as they slowly thawβno watered-down mocktails here! You can also freeze raspberries into ice cubes with a bit of white grape juice in an ice cube tray. It adds flavor and visual flair as they melt into the drink.
- Add a Sugared Rim. For a fun, festive touch, dip the rim of the glass in orange juice, then in sugar. It gives a special sparkle, especially for brunches and showers!
- For Younger Kids or Toddlers. Reduce the raspberry extract or skip it altogether for a milder taste. You can also serve in a smaller cup or plastic cup with a fun straw to make it extra kid-friendly.
- Batch it for Brunch. Making a large batch? Combine juices and extract in a pitcher, refrigerate, and top with sparkling water right before serving. Stir gently to preserve bubbles.

I remember having a toddler AND being pregnant on Mother's Day, so this drink would have been a very welcome addition to the Mother's Day brunch menu that year!

But the main reason I make these mocktails is because my kids LOVE them! Oh what I would have given to have had these fancy drinks when I was a kid....I counted myself pretty lucky to even get Pic-a-Pop! Now I can live vicariously through them. And this recipe is kid-tested and approved, of course.
