I don’t know what it is about blue drinks that makes them so enticing, but whenever I see one, I want it. Recently, when I was out shopping with my daughter, she asked me to buy some blue raspberry martini mix because, well, it was blue! And of course I couldn't resist, thinking that I could make a cool-looking blue drink out of it, and this Blue Raspberry Mocktail was the delicious result. It also inspired these Coconut Blue Raspberry Popsicles! It's a fun, blue non alcoholic drink that’s perfect for summer!

There weren’t a lot of fancy drinks for children around when I was a kid, especially blue ones! And if you got pop, you counted yourself among the lucky. This is one of the reasons why I love to give my kids the fun and fancy drink experience!
This Blue Raspberry Slushie is a great summer drink to make for kids on a Friday night when parents may be enjoying a special drink as well. There are a lot of blue drinks with alcohol out there, but not so many blue non alcoholic drinks, especially summer slushy drinks. Blue drinks are just plain FUN!

🥘 Ingredient Notes
This blue raspberry drink is made with Blue Raspberry Martini Mix, so you don't need neon blue food coloring. Since I couldn’t find many mocktails made out of blue raspberry mix either, and I wanted a slushy drink for the kids to enjoy in the hot weather, I came up with this! For this non alcoholic blue raspberry drink recipe, you'll need:

- Blue raspberry martini mix. There are several brands, but I use Mott's Mrs. T's Blue Raspberry Martini Mix.
- Whipping cream (liquid). Make sure you use 33-36% fat whipping cream or heavy cream.
- Sparkling water (lemon lime flavor). I use Lime Bubly, or Perrier, or No Name lemon-lime sparkling water.
- Coconut extract. Coconut extract is easiest to find online, but you can find it in some grocery stores. I don't recommend using a substitution.
- Whipped cream. I use coconut whipped cream (in a spray can). Gay Lea makes a dairy-free one that I buy for my daughter, so I have it on hand.
- Sprinkles. I use a sprinkle mix of non-pareils and jimmies or whatever I have on hand (sometimes one or the other, as long as it includes the color blue). I buy them in bulk at Bulk Barn, but you can find similar sprinkles at your local grocery store or online.

📖 Variations & Substitutions
- Blue Raspberry Martini Mix - The last time I went looking for this, I couldn't find it anywhere! So, I used Blue Raspberry Kool-Aid Jammers (they are like little drink boxes, but in foil). But you could also use Minute Maid Blue Raspberry drink. Since both of these drinks aren't quite as concentrated as the martini mix, I recommend you add a couple of squirts of Kool-Aid Liquid Blue Raspberry Drink Mix concentrate. *Your drink will be a slightly different color of blue, depending on which you use, as you can see by the photos
- Sparkling Water - You could use Sprite or 7-Up instead, but it will be sweeter, and it adds more sugar.
- Whipped cream - You could use regular spray whipped cream in a can or make your own whipped cream.
- WW - see Weight Watchers section
- Dairy-free. Use coconut cream to replace the whipping cream/heavy cream. The coconut whipped cream is already dairy-free. If that's enough coconut for you, you can skip the coconut extract.
🔪 Step-by-Step: How to Make Coconut Blue Raspberry Slushies

- Step 1: Add all ingredients (except garnishes) to the blender.

- Step 2: Blend on high until smooth (about 30 seconds).

- Step 3: Pour into glasses.

- Step 4: Top with coconut whipped cream or regular whipped cream, sprinkles, and fresh raspberries.
Expert Recipe Tips
- Use cold ingredients. Starting with cold sparkling water and cream helps the slushie blend faster and stay icy longer without melting too quickly.
- Don’t over-blend. Blend just until smooth (about 30 seconds ). Over-blending can make the drink too liquidy, especially if your blender generates a lot of heat.
- Chill your glasses. Pop your serving glasses in the freezer for 5–10 minutes beforehand to help keep the slushie frozen longer after serving.
- Adjust thickness as needed. If the slushie is too thick, add a splash more sparkling water. If it’s too runny, add a bit more ice and pulse again.
- Garnish right before serving. Add whipped cream, sprinkles, and raspberries just before serving to keep them looking fresh and festive.
- Freeze leftover mix in popsicle molds. Turn extra slushie into Coconut Blue Raspberry Popsicles for a fun frozen treat later.
- Make it dairy-free. Use canned coconut cream or full-fat coconut milk in place of whipping cream, and top with dairy-free coconut whipped cream for a completely dairy-free version.
- Sweeten to taste if needed. Depending on the brand of mix or drink alternative you use, you might want to add a touch of simple syrup, agave syrup or liquid stevia if it’s not sweet enough.

👪 Serving Size
You can make this drink in 4 8-oz glasses or 2 larger glasses. You can also double or triple the recipe by simply clicking on the serving number and selecting the number of servings you'd like. The ingredient quantities will automatically adjust.
🔢WW Points
You can buy Blue Raspberry sugar-free mix (Monin brand) and instead of the whipping cream, use ¼ cup non-fat plain Greek yogurt and ¼ cup non-fat milk. Gay Lea light whipped cream (spray can) is very low ww points, as well.
Storage
This blue raspberry slushie should be stored in the freezer. You can make this drink in advance and simply store it in a juice jug (affiliate link) in the freezer (that's what I do). I also store the leftovers the same way. However, the whipping cream may separate from the rest of the drink. If this happens, then just blend it in the blender for 15-20 seconds before serving. And garnish it just before serving.

❔ Recipe FAQs
The coconut extract is what gives this slushie its tropical twist. If you don’t have it, you can omit it, but the coconut flavor will be much less noticeable unless you’re using coconut cream.
You can use regular ice cubes — the blender will crush them as it blends everything together.
A standard high-speed blender works well. You don’t need a slushie machine — just something powerful enough to crush ice smoothly.
You can experiment with other fruit-flavored martinis or drink mixes, but it will change the color and taste. Blue raspberry is what gives it the signature look and tangy flavor.
Blue raspberry is a great drink flavor to play with, and this blue raspberry drink was an experiment gone right. All the ingredients are easy to find in any grocery store, including the blue raspberry mix, sparkling water, coconut extract, heavy cream (I don't use ice cream, as many blue slushie recipes call for), and it takes only 5 minutes to throw together!
