This Leftover Turkey Wrap is a healthy turkey wrap, using up leftover turkey and loaded with vegetables! And unlike most cold turkey wraps, this one makes a great dinner wrap because it's served WARM. I love turkey leftovers just about as much as I love turkey. In fact, I always make a bigger turkey than we need, just so I will be guaranteed leftovers. Hey, turkey only happens a couple times a year in my world and I want to savor it!
If you don't have a lot of leftover Thanksgiving turkey, no need to worry -you only need a couple of cups of turkey to make this amazing healthy turkey wrap! It's not only delicious, it's healthy and it's Weight Watchers friendly @ only 5 WW points. It's perfect for using up your leftovers post-Thanksgiving, but it's great for dinner on busy weeknights or a quick lunch any time of the year. You can even pack it along in the lunchbox for a healthy lunch.

Leftover Thanksgiving sandwiches can almost be as fattening as the meal itself, but this one is a really light and healthy turkey wrap and a great way to use up your leftover turkey in the form of a healthy dinner. Who wants a heavy or high-calorie meal after an indulgent turkey dinner? Not me. If you are looking for healthy choices, this turkey wrap is a great option!
🥘Ingredient Notes
For this Thanksgiving Leftover Sandwich you'll need:
- Sauce: soy sauce, ketchup, lime juice, liquid honey, fresh ginger, garlic, olive oil, sesame seeds and cornstarch make up this delicious sweet savory, and a little spicy sauce that the turkey and vegetables are sauteed in!
- Filling: leftover turkey, bean sprouts, snow peas, carrots, red bell peppers, cilantro (fresh) and green onion make up the fresh and healthy filling.
- Large Tortillas. I use flour tortillas, but you can use any type!

- Panini press- throw it on the panini press if you want a grilled wrap
- Gluten-free - use gluten-free tortillas

- Onion - you could use red onions instead of green onions
- Turkey - you can use deli turkey meat, white or dark meat (using dark turkey meat will increase the WW points), or ground turkey breast instead of leftover roast turkey

🔪How to Make Healthy Leftover Turkey Wraps
This healthy turkey wrap is easy to make with leftover turkey, sauteed vegetables and fresh vegetables!
Make the sauce and filling:
- Step 1: Combine soy sauce, ketchup, honey, lime juice, ginger, garlic cornstarch, olive oil, and sesame seeds in a small bowl.
- Step 2: Heat a large skillet over medium heat and add bean sprouts, peas, and red pepper. Sautee for 5 minutes, then add turkey and sauce
- Step 3: Cook for about 8-10 more minutes or until vegetables soften and sauce thickens.
To assemble:
- Place tortilla on cutting board and add ⅛ of the hot turkey/veggie mix. Then add ⅛ of the carrots and cilantro.
- Fold the sides over.
- Then fold the bottom up. ,

🥗 What to serve with Healthy Leftover Turkey Wraps?

🔢WW POINTS
These leftover turkey wraps are low fat and Weight Watchers friendly @ 5 WW points. You could use a lighter tortilla to bring down the points. If you don't want the carbs and want to lighten them up even more, make them into lettuce wraps - replace the tortilla with lettuce.
🌡️Storage
If you want to cook the veggies in the sauce ahead, store those wet ingredients separately from the dry ingredients (tortillas) and grated carrots, in an airtight container in the fridge, and combine when ready. Good for 2-3 days.
If you need to make it into a wrap in advance, make sure you wrap it well in plastic wrap, then in foil. Store leftover wraps the same way.
These ingredients don't stand up well to freezing.
Top tip
Don't put the wraps together too far in advance of serving them or they will get soggy. Ideally, you want to put them together and serve immediately (within 10- 15 minutes)

- 4 teaspoon lime juice
- 4 teaspoon liquid honey

- 2 teaspoon minced garlic
- 2 teaspoon olive oil
- 2 teaspoon sesame seeds

- 2 cups leftover turkey, cut into thin strips
- 4 large (10 inch) tortillas
- 8 oz - package of bean sprouts
- 6 oz - package of snow peas - ends trimmed
- ½ cup carrots peeled and grated
- 1 red pepper, chopped into thin strips
- 4 tablespoon cilantro (fresh)
- 3 green onions, chopped
Instructions
