These Twice Baked Caesar Potatoes (stuffed potatoes) with Ceasar salad dressing, are quick and easy, make a great side dish or appetizer and are a great way to use up leftover baked potatoes!
Popular all year long, Caesar Potatoes make a great weeknight meal and pair well with Caprese Chicken breasts and Healthy Roasted Carrots (with Brown Sugar). This recipe was inspired by my Caesar Salad.

I don't know about you, but I always make too many potatoes. It's just this thing I do. They come in those enormous bags I feel obligated to buy because they are a good deal. Then I bake way too many of them, with the hope that someone will eat them.
And when that doesn't happen and I find them shriveled and decaying at the back of the fridge (far more often than I'd like to admit), yet another wave of food-wasting guilt washes over me.
That is until I discovered twice baked potatoes! Now the kids actually get excited when baked potatoes are on the menu because they know we'll have leftover baked potatoes and this easy Twice Baked Potato recipe is on deck!
🥘 Ingredients
I am a huge fan of food that does double duty and can easily be morphed into a second (even yummier) meal with very little effort. I use a homemade Caesar dressing (I had leftovers from my Grilled Chicken Caesar Salad the night before I made these), but you can substitute a store-bought one. If you're looking for Chicken Caesar salads, you'll love this one -I always get asked for the recipe!)
In addition to Caesar salad dressing, you'll also need some common ingredients that you'd typically have on hand:
- bacon bits
- butter - I use light
- sour cream - I use light
- parmesan cheese- I use light
- cheddar cheese - I use sharp light cheddar
- green onions
So, the next time you are baking potatoes, go ahead and make too many. They won't go to waste with these Caesar Salad Potatoes to make with the leftovers!
🔪Instructions
PREP: Preheat the oven to 400 degrees F/204 degrees C.
Cut baked potatoes in half lengthwise.
Scoop out the potato flesh into a large mixing bowl.
*Be sure not to scoop right down to the skin - you need to leave about a ⅛ inch border of potato in the skins to support the filling
In a large bowl, mash with a potato masher or fork.
Add the caesar dressing, butter, sour cream, parmesan cheese, ¾ cup of cheddar cheese, and bacon bits. You can add the green onion here or use it as garnish. Mix until creamy.
Divide the mixture evenly and spoon it back into the potato shells.
Place potatoes on parchment lined (or sprayed with non-stick cooking spray) baking sheet.
Sprinkle reserved cheese over tops of potatoes
Cook the potatoes in preheated oven for 15 minutes. Remove from the oven garnish with green onions, and additional parmesan cheese, then sprinkle with kosher salt or sea salt and black pepper, if desired. Serve warm.
*You can also make these Caesar stuffed potatoes in your air fryer. Cook on air fry at 400 degrees F for 10 minutes.

How to reheat Twice Baked Potatoes
I reheat my twice baked potatoes by putting them in the microwave for 1 minute to 1 minute 30 seconds.
📖Variations & Substitutions
- Caesar salad dressing: you can use store-bought instead of homemade, but for enhanced flavor, add a little anchovy paste (½ tbsp) in addition to the dressing
- Twice Baked Potatoes with ranch- you could sub ranch dressing for the caesar
- Bacon bits - you could cook real bacon and chop it up or use turkey bacon
- Cheese- you can use regular, light or fat-free, and mild, medium or old cheddar
- Sour Cream you can use regular, light or fat-free or sub Greek yogurt
- Potatoes - you can use any type of potato you have on hand, such as Yukon gold potatoes, or sweet potatoes, but I prefer red potatoes
- Parmesan Cheese- you can use regular, light or fat-free
🍽Equipment
You will need a cutting board, a sharp knife, a rimmed baking sheet or a baking dish, a cheese grater and a potato masher or fork for this easy recipe. *See recipe card for recommended equipment photos and links

Store these twice baked potatoes in an airtight container in the fridge for up to 4 days (this includes from the time you originally baked the potato).
👪 Serving Size
This twice baked potato recipe makes 8 servings. However, you can half, double or triple the recipe by clicking on the serving number. The quantities will automatically adjust.
🔢WW Points
This recipe is @ 6 WW points per potato using light cheddar, light butter, light sour cream and light parmesan. You can reduce the points even further by using 2 slices of chopped turkey bacon, fat-free sour cream, fat-free parmesan, fat-free cheddar cheese and using a light or fat-free store-bought Caesar salad dressing - this will bring the weight watchers points down to 4 ww points!

I admire Milo's daring/gall as well.
I usually microwave my potatoes and finish them off on the bbq and make more than a single person can eat. I don't make anything as fancy as your Caesar twice baked potatoes however. I usually just chop them up and saute them in a non stick frying pan with butter and several good shakes of paprika. Makes a great addition to a breakfast plate of fried eggs, bacon and cottage cheese. Or I throw them into breakfast burritos.
