Ninja Air Fryer Fajitas are a scrumptious and healthy meal that is perfect for anyone looking for a low-carb and low-calorie option. This delicious meal is also WW friendly (4 ww points), and also makes a great meal prep item!

These air fryer chicken fajitas are popular any time of the year and make a great busy weeknight meal or dinner for your Cinco de Mayo celebrations! They inspired my Air Fryer Tacos and pair well with Spanish Brown Rice.

🥘Ingredient Notes
This Air Fryer Chicken Fajitas recipe requires just a handful of simple ingredients, including boneless chicken breasts, fajita spice mix, tortillas, bell peppers, lime juice, and olive oil. The chicken and vegetables are cut into strips, then mixed with the spice mix, lime juice, and oil.
You use less oil than if you were cooking in a skillet on the stovetop, while keeping the chicken and vegetables moist.
Ingredients in air fryer fajitas

- Fajita seasoning mix. I use a store-bought mix because it's quicker and easier, but could make your own fajita seasoning.
- Tortillas (10 inch). You can use any flavor of tortilla you prefer, or white or whole wheat.
- Bell peppers. I use a combination of red, orange, and yellow bell peppers, but you could also use green bell peppers as well.
- Olive oil. Because you're using olive oil in the recipe, no other spray oil is necessary for this recipe.

📖Variations & Substitution
- Toppings/Fillings: lettuce, tomatoes, cheddar cheese, queso fresco, salsa or Homemade Pico de Gallo, sour cream, avocado cream sauce, olives, fresh cilantro, jalapenos, refried beans, guacamole, or avocados
- Gluten-free - instead of flour tortillas, use corn tortillas and gluten-free fajita mix to make this gluten-free.
- Spicy - add a little chili powder, crushed red pepper flakes or an additional ½ teaspoon cayenne while cooking to imbue heat into the dish, or add banana peppers or jalapenos to the wrap
🔪How to Cook Chicken Fajitast in the Air Fryer
Prep: Cut onion into rounds, then in half, and separate, then slice peppers. Cut chicken into strips.
HINT: Don't cut your peppers or onions too thin or they will burn!

Toss chicken strips, onions, peppers, spice mix, lime juice (juice of 1 whole lime), and olive oil in a large bowl.

Mix until the chicken and vegetables are fully coated.

Add mixture to air fryer drawers.
*I keep the grates in the air fryer

Set the air fryer to 390 degrees F (198 degrees C). Cook for 15 - 20 minutes, stopping at every 5-minute interval to shake or stir.
It will be ready when chicken pieces are cooked through and no longer pink (reaches an internal temperature of 165 degrees F/ 74 degrees C) and vegetables are tender.
*Pour back into a clean large mixing bowl and pour any juices (from the bottom of the air fryer drawer back in) while holding the grates
*Squirt on some additional lime juice, if desired.
To make air fryer chicken fajita wraps:
HINT: Warm your tortillas in the microwave for 10 seconds - this makes them easier to wrap

Add filling to the middle of the warm tortilla, and you add a little sauce, etc, here as well (salsa, sour cream, cilantro, guacamole, or squirt some fresh lime)

Fold the tortilla over on one side (over the filling in the middle)

Fold the tortilla up from the bottom.

Keep rolling over (from the folded side, while you keep the bottom tucked in) until it's completely folded over. *You can put a toothpick in it to make it stay together or fold it so it will stay together. You could also wrap it with wax paper.

Expert Recipe Tips
- Marinate for Extra Flavor (Optional but Recommended). Letting the chicken, lime juice, oil, and spices sit together for 15-30 minutes before air frying can intensify flavor and tenderize the meat. It's a quick marinade that makes a big difference!
- Use Uniform Slices for Even Cooking. Try to cut your chicken and veggies into uniform strips-this ensures they cook evenly and finish at the same time. Uneven pieces can lead to some being overcooked while others are underdone.
- Don't Overcrowd the Air Fryer Drawer. Even if your air fryer has large drawers, avoid piling the ingredients too high. Air fryers work best with good airflow, so cook in batches if needed. This keeps the chicken juicy and the veggies from steaming.
- Drain Juices for Crispier Fajitas. If you want slightly crispier veggies or edges on your chicken, drain off excess liquid halfway through cooking (or cook the filling a few minutes longer at the end with the drawer open slightly).
- Finish with a Fresh Squeeze of Lime. Adding a final squirt of lime juice right before serving brightens up the whole dish and enhances the fajita seasoning flavors-don't skip it!
- Customize with Homemade Fajita Seasoning. If you have a bit more time, making your own fajita spice blend gives you full control over sodium, heat, and flavor balance.
- Warm Tortillas Properly for Better Folding. Microwaving tortillas for 10-15 seconds with a damp paper towel keeps them pliable and less likely to crack or tear when rolling.

- Mix until the chicken and vegetables are fully coated.
