Once a year, my husband and kids went on a berry picking excursion. And since Saskatoon berry season had (sadly) already ended, I ended up an oversupply of black currants. It's a good thing I love black currants too. But even for someone who loves black currants, 5 ice cream buckets is a lot to deal with!

- red chili sauce or red pepper jelly
- baguette
- brie cheese
📖 Variations
Jam: Black currant jam (affiliate link) and it isn't always easy to find in stores, so you could substitute blueberry or blackberry if need be. However, black currant really is the ideal jam for this recipe because it's a little more tart than other jams and goes really well with savory ingredients. And it's easy to make because you don't need pectin!
Turkey: Use leftover turkey or roasted turkey deli meat!
Fresh herbs: I use fresh rosemary, but you can use another fresh herb such as parsley.
Spicy: if you like it a little spicier, add a little extra red chili sauce (see NOTES). If you can't find it, use red pepper jelly (affiliate link)

This easy turkey brie bites recipe makes 12 servings. However, you can half, double or triple the recipe by clicking on the serving number and selecting the number of servings you'd like. The ingredient quantities will automatically adjust.
🌡️Storing
You can make this delicious baked brie bites in advance, then warm them in the microwave for 20-30 seconds before serving. They can be stored in the fridge, in an airtight container, for 2 days after they are made.
I don't recommend freezing them, as this ingredient combination doesn't stand up to freezing.

📋 Turkey Brie Bites Recipe
Equipment
Ingredients
- 6 slices leftover roasted turkey or deli meat approx. 100 g, deli meat or leftover turkey
- ½ cup black currant jam store-bought or homemade
- 3 tablespoon red chili sauce or red pepper jelly (*See recipe notes)
- ½ baguette, white or multigrain *I used multigrain
- 75 g Brie cheese (one small wheel)
Garnish (optional):
- fresh herbs * I used rosemary
Instructions
- Preheat oven to 500 degrees (broil) and line a baking sheet with parchment paper.
- Cut the baguette into 12- 1” circles. Top each baguette circle with ½ slice of roasted turkey.
- Mix the jam and chili sauce together then top turkey with 1 tablespoon of black current jam /chili mixture, dividing the ingredients between all the baguettes.
- Slice Brie and put 1 slice on each bite. (I peel the brie with a vegetable peeler).
- Broil in preheated oven for 2-3 minutes (or until cheese is melted)on 500 degrees F. Cool for 5 mins and serve!
Garnish (optional)
- Garnish with a sprig of rosemary.
