I'm a little crazy about buffalo chicken stuff, and if you are too, you will love this easy, Weight Watchers, healthy version of Buffalo Chicken Dip! But what you'll love most is that it's a super quick, easy, and delicious recipe to make with canned chicken breast right on your stovetop. It's one of my favorite appetizers!

When I have a craving for something (and buffalo chicken is a pretty common craving), I want it now, and I generally don't have time for the really involved prep that most recipes require. That's why I used canned chicken in this Weight Watchers Buffalo Chicken Dip. That way, there is no pre-cooking chicken breast or even buying and chopping up a rotisserie chicken. It's Weight Watchers friendly @ 2 WW points.

And you can't even tell the difference between the canned and fresh once it's mixed in the dip! Nor do you have to haul out the slow cooker or heat up the oven (which is perfect for summertime munching!)
I love buffalo chicken so much that I created this Buffalo Chicken Zucchini Pizza Bites, No Cook Buffalo Pulled Chicken Sandwich, Skinny Buffalo Chicken Celery Sticks, and these Buffalo Chicken Stuffed Mini Peppers (shown).
🥘 Ingredient Notes
For this easy buffalo chicken dip recipe, you'll need:

- Canned chicken breast. It's important to buy 'Chunks of Chicken', NOT flaked. You can still use the flakes of chicken, but it doesn't look as appetizing.
- Ranch dressing mix (dry mix). I use Hidden Valley
- Buffalo wings sauce. I use Frank's Red Hot Sauce

📖 Variations & Substitutions
- Chicken- you can substitute shredded chicken breast or rotisserie chicken
- Cream cheese- you can use low-fat or full-fat cream cheese instead, but you need to factor that into the WW points, if you're following the program

🔪Step-by-Step: How to WW Make Buffalo Chicken Dip

- Step 1: Pour everything (except green onions) into a small pot.

- Step 2: Cook over medium-low heat on the stovetop until the cream cheese melts and it's heated through.

- Step 3: Serve. Garnish with chopped green onions, if desired.
🥗 What to serve with Weight Watchers Buffalo Chicken Dip
- vegetables- carrot sticks, baby carrots, celery sticks, cucumbers, bell peppers
- water crackers
- mini whole wheat pitas
- WW tortilla chips

Expert Recipe Tips
- Use chunk-style canned chicken for the best texture. Flaked chicken will work in a pinch, but chunk-style gives the dip a more appetizing, hearty look.
- Warm slowly to avoid separation. Heat the dip over medium-low heat so the cream cheese melts smoothly and doesn't become grainy.
- Adjust the spice level to your taste. If you prefer it milder, use less buffalo sauce or mix in a little plain Greek yogurt. For extra heat, add a dash of cayenne pepper or hot sauce.
- Add garnishes for extra flavor. Chopped green onions, a sprinkle of light shredded cheese, or even a drizzle of additional buffalo sauce make the dip look and taste even better.
- Keep it creamy with a splash of milk if needed. If the dip thickens too much while reheating, stir in a tablespoon or two of skim milk to loosen it up.
- Prep ahead for easy entertaining. You can mix everything together and refrigerate it, then just heat it on the stovetop right before serving.
- Serve with a variety of dippers. Pair with crunchy veggies for a low-point option, or add whole-grain crackers and pitas for guests who aren't on WW.
- Make it a meal. Leftovers can be spread in a wrap, on toast, or stuffed into mini bell peppers for a quick and easy snack or lunch.
🌡️Storing
Store: You can store this healthy chicken dip in the fridge in an airtight container for up to 3 days.
Reheat: Reheat on the stovetop on low until the cream cheese is melted. *Do NOT microwave
